Patience.. In the meantime, could you tell us what did you use? Amount of Tea?

Water? Sugar? Length of fermentation?

I just had some of my 1st batch which I made half raspberry and half

plain. It went into the swing top bottle fizzier than it is now. As a matter

of fact it is flat. The plain kt actually tastes better than the raspberry, but

it went flat, too. Neither, tastes great. Phooey.

Next time, I will add a bit more sugar and I hope to have one of our coolers on

hand to do a 2nd ferment.

My rasperry has always turned out fine ,maybe not enough sugar as i add sugar to

the berries,purree them then add to KT

This happened with mine too! I had plenty of fizz and then it went away

after they were cooled. I need to know how much to use on the second

ferment?? phooey is right. Thanks all!

This is what I think I did (Lyme brain), it's what I did for the batch now

brewing. I boiled 3 c of water, added 2/3 c sugar, then steeped 3 black & 1

green teabags 15 mins. Then I added 3 c of water to help cool it faster. When

it was cool enough I added the culture and 1 c of starter.

I believe it brewed 7/8 days and then when I drank it, it had been bottled 7/8

days.

I just poured some of the raspberry and it is fizzy, seems darker in color, and

a bit more tasty. I don't know how that is possible in a day.

I am brewing in a 2 qt jar. I'd appreciate any help in getting the recipe

right. BTW, I used decaf.

PS Not real fizzy or any fizzier than what I bottled it.

Hi

The potential dangers of second fermentation have been well documented here, I

will not repeat these.

Some people do get immense carbonation in one day. for many others it takes a

while longer.. Up to a week or more for my own ferment. I use really sturdy

bottles and they ferment in plastic cooler, so if they were to blow up not much

damage except lost wonder-brew :( ..  Even after a week of double ferment , in

my case, I rarely have volcano-type carbonation ... A friend of mine using the

exact same culture ( I gave it to her) and tea, (I shared my teas with her) has

immense carbonation after 3 days , in fact out of the fermenting vessel her

brews are already fizzy, mine are not .. Different micro-organisms make-ups in

our brewing environments ... So be patient. I think your recipe is fine .. Not

much I would change .. I would make more though ;) ..

Again Patience.. Give it a few more brewing cycles and or days ...
