Having never ventured into butcher shops until the last year, it is all a very new experience for me. Apparently there is a really good, genuine, organic butcher in Byron Bay. I suspect he might be anti-dairy and lean more towards low fat (or only monosaturated fat). If I read it and found it in conflict at any point with WAPF principles, I would choose WAPF principles. The testimonial includes references to some hormone creams (Bliss Red and Bliss Blue) as well.
