They both smell horrible. FWIW, IPA, or iso propyl alc is not denatured it may contain other items (ie: water). It is by itself a denaturant. It has a very strong distinctive AWFUL odor. EthOH, unless specified odorless (US formula SDA39C or SDA40 et al with lower case letters) may in fact be denatured with IPA among other denaturants. Check your friendly gov site for official formulas to be used in denaturing Alcohol. Everclear was meant to be used as a food additive when preserving cherries, peaches, etc. A co solubilizer to food/botanicals. (eg vanilla beans, orange peel, lemon peel). Or even for a flambee. I use rum and sugar plus secret ingredient to create a crepe sauce. Everclear could be use instead of rum so as no to taint your recipe.
