Guest guest
I do that too and love it but I was hoping for something a little more exotic that I can make ahead or at least make the dressing ahead. Something really special that anyone will love. My family does not like the kefir so I have to find a way they will eat it and not know what they are eating. It feels a lot safer -- I gave me food poisoning once with Waldorf salad and plain mayo, but kefir-salad is impervious, I think. Waldorf salad is my favorite: Dice some apples Roast some chopped nuts Toss in some grapes, or raisins Add pinapple or other fruit, if you want Toss with kefir, salt (you can add yogurt too, if you want, and spices like cardamom if you are in the mood). Kefir cream goes over well with everyone I've tried it on (we have mostly conventional-food eaters as guests). If you mix kefir cream with chopped cukes, cayenne, raw chopped garlic, salt, and a little lemon juice, you get tzaziki, which is the most addictive stuff on earth (one person said -- " Chicken is just an excuse to eat tzaziki " ). But it isn't very traditional for Thanksgiving, unless maybe you are Lebanese. If you serve kefir cream as a side to a baked potato though, most folks will just think it is " sour cream " -- good quality sour cream -- and you don't have to " sneak " it at all. -- Heidi
Guest guest
I love the waldorf salad recipe and have added it to my list of Thanksgiving recipes! Also I had forgotten about the kefir cream. Thanks for reminding me! Wonderful suggestions! Thanks! Before I was eating NT style and before I went gluten free, the fav fruit salad at my house was a simple chopped apples, cut up bananas and chopped english walnuts tossed with cool whip! (you will have to toss the apples with a little lemon juice to keep them from turning)I bet if I changed that cool whip to kefir cream, no one will know the difference! While I was waiting for some replys to my request I googled my request and found this recipe that I will add here in case someone else may need it. Enjoy! Ambrosia Sauce for fruit salad 2 C yoghurt (I'm going to use kefir) 1T lime juice 1T lemon juice 1T orange juice 3oz honey Combine all and mix well. Pour over fruit 1/2 each of Pineapple, apple, cantalope, honedew, watermelon, grapes red & green), strawberries and banana. I think I will change the fruit to suit me and if it is ambrosia it needs some coconut. Don't you think? ~Del > > >I was hoping someone would have a fruit salad recipe with a kefir > >dressing that can be made ahead or maybe the day before Thanksgiving. > >Thanks, > > > >~Del > > I just use it instead of mayo in the traditional dressings. Not that I need to tell YOU guys... but this is an interesting aside on cool whip. My Mom used to make a delicious recipe that had cool whip, and when I asked her why she doesn't make it anymore, she told me she met one of the guys who invented Cool Whip...and he told her NEVER to eat it! Apparently he suffers a guilty conscience for foisting such an artificial food on the unsuspecting populace...lol!
