Even though I live on the Chesapeake Bay, which at the turn of the century was the worlds largest exporter of canned oysters (and incidently the worlds first canned food industry was Chesapeake Oysters) I no longer trust the viability of Chesapeake oysters except on rare occasions because of environmental toxin reasons. Plus the Chesapeake oysters are over-fished and not propogateing well and can't really be farmed. Preferably the oysters would be farmed in clean ocean waters in the USA where it is regulated and relativly fresh. Showed mussels worst from Chesapeake Bay in comparison to all other Northeast areas tested. Chesapeake Bay used to be called Americas protein factory, the worlds largest estuary. There used to be so many shellfish the water would filter 2 or 3 times a year .. now the shellfish are about %99 gone and the water never filters. Much of it is due to nitrogen and the 2 leading sources are 1) animal poo and 2) people poo. However, the pot did invisibly smoke for awhile, which didn't bother me but gave my girlfriend terrible problems.
