Re: really raw honey crystalizes?

We have several bee keepers in our area that assure us their honey is raw

however we've noticed after a short time that their honey crystallizes. I found

a jar of really raw honey tucked away in the back of the cupboard that's been

there for well over a year and it's still just as thick and creamy as it was

when I bought it. If the honey crystallizes, does this indicate that it isn't

raw?

My understanding is that honey can only crystallize

if it _is_ raw.
