Guest guest Posted October 19, 2003 Report Share Posted October 19, 2003 This isn't a saute recipe but it's delicious and easy. Peel and dice (fairly small) a sweet potato or two. Toss lightly with olive oil, a clove or two of crushed garlic, some fresh minced or dried crushed rosemary, salt, and pepper. Roast in 450 degree oven (I use toaster oven for my small quantities) about 40 minutes. Toss with some chopped fresh parsley if you have it. Eat. Can also use other diced root veggies or combination (potatoes, turnips, beets), or other herbs. If you don't like the typical overly sweet preparations of sweet potatoes (marshmallows and crap), you might be pleasantly surprised by this savory preparation. Over the summer I was getting zuchinni for free from my grandparents, and when that ran out I was getting free green bell peppers and tomatoes, so used those. Either the former or the latter pair are great, IMO, with onions, garlic, olive oil, and some soy sauce, and whatever spices you happen to like/have thrown in. I use olive oil, garlic, and onion with everything as a foundation, and then cook whatever I happen to have. Lately I've been relying mostly on fermented veggies though.
