I've kept Mike's folate list below for anyone who missed it. Just found this on

Dom's kefir site

(http://users.chariot.net.au/~dna/kefirpage.html#kefir_new-comers). He says

that ripening kefir increases folate content - interesting. I wonder how/why it

does that. So I wonder if kefir kraut veggies could have their folate content

increased?

" There are unique advantages gained by ripening strained kefir for a few days. I

find mild ambient temperatures between 12° to 22° C are good temperatures for

ripening kefir. At day 1 - 2 or ripening, Folic acid should increase by 117 % to

possibly 120% compared to the fresh milk. There are other B Vits that increase

slightly, while a few others are found in slightly less amounts or remain the

same as in fresh milk. Other benefits of ripening including the reduction of

lactose, which is desirable for both lactose intolerant individuals, or for low

carbohydrate dieter, be it for reasons other than Diabetes. "
