Roman,

Mom always dredged it in egg, then flour with salt and pepper and fried it.

Always preferred it pickled than fresh because if its not right out of the

cow it doesn't take long for it to taste like old innards. Do it tonight if

its not frozen.

I've used tripe in Menudo before. It tastes like tamale soup.
