Sauerkraut question?

Hi,

I just got my copy of NT and I just love it!

I made the sauerkraut and put it in a canning jar.

There are some references that say to leave the lid loose. The book

says to leave the lid tight.

Is this going to explode? It does seem to be working even though I

opened up the lid a couple of times yesterday when I first made it.

I also made the Rice soup and it was wonderful! I added a little

garlic and fresh parsley to it, because I always do that to my chicken

noodle soup. I can't wait to try some other things, especially the

breads. I just ordered a mill so I can't do the breads just yet.
