The farm asked which fat I wanted " the kidney fat rings a bell with the tallow thing... " I don't have a clue what this means. Does anyone know what kind of fat I need to ask for or does it matter? Guest guest Posted October 15, 2003 Report Share Posted October 15, 2003 kidney fat is 'suet'... supposed to be the best for cooking, that's what they use traditionally to make pemmican... tallow is the fat to make candles and soaps from, don't know what part of the animal it comes from... there's the rest which is used to make 'drippings' as it's called here in England and is used like lard.
