Guest guest
had a chat with my mum... apparently we never ate pancreas and she's not aware of people eating it... said stuffed beef spleen is very good and that she used to cook pork kidneys for us when we were young... said there's a difference between female and male kidneys, something to do with a strong smell but no taste difference... also, my grandmother used to cook lungs and do a quick sauté of sliced brain... both are apparently very yummy though my mum never cooked those for us... we live and learn.... Dedy Re: Pancreas,Taste? Heidi, Pancreas look similar to the thymus gland (sweetbreads) which tastes like chicken but better. Pancreas may be tougher than sweetbreads because the thymus is less active after nursing stops from the mother. pancreas keeps on going as we know. Mom used to fry sweetbreads. Sauteing in butter is a better idea. Well done was my parent's preference. Wanita

Well I LOVE sweetbreads but have you tried eating pancreas? I'm a little iffy on it because it does produce so many hormones. -- Heidi
