*simple* fermentation?

I've been mulling over what would be the best place to start with fermented

foods, considering that I need the absolute easiest, least energy-demanding

project there is. The opposite of most people, I have the time but not the

energy. So first I'm considering any possible store-bought products that

could add some good enzymes and probiotics to my diet.

Going into the wilds of the back of my fridge, I found some umeboshi plum

paste that had been there for years, and looks good. Any thoughts about

that, and store-bought miso? Are they worth using, or is there no

substitute for making your own?

Seems kombucha might be an easy project.. kefir I'm not sure about, since I

can't easily get good milk.. it's a choice between supermarket milk on the

one hand and organic but UHT milk on the other. Hard to feel motivated to

use either.

And has anyone used the Biolacto naturally fermented veggies that are sold

commercially? I can't eat much fermented veggies because they're not that

much easier for me to digest than raw, but probably small amounts would be

helpful. I also thought that unpasteurized kimchi was available

commercially, maybe at Asian markets?
