Guest guest Posted October 1, 2003 Report Share Posted October 1, 2003 < Does anyone know a way of persuading flapjacks to stick together without adding a load of sugar? > ?? i've never added sugar to my pancake recipes. the egg ought to hold the batter together. since i'm gluten-free, my pancakes now are the silver dollar kind, made from leftover amaranth or millet or amaranth/millet porridge (to which i've already added stevia). i just add 1 egg, some arrowroot, some vanilla, and sautee them up. my faves are the amaranth, and my mom loves them. don't expect fluffy, though, unless you add some sort of leavening agent. i apologize if i'm missing something here...? hth-- allene Quote Link to comment Share on other sites More sharing options...

If you add a little xanthan gum, you can make them just like the " regular " kind. Waffles too. Use 1 tsp xanthan to a cup of flour.
