You can also get pork fat back as its called here, a chunk of fat off the back that is about 1 to 2 inches thick cut too you your liking. But I wouldn't count on gaining any weight on fat it has the reverse effect. Tim dripping Tallow This sounds great. I want to avoid starches for a while and if I can get 2lb of fat down me a day I reckon I might even start gaining weight. Perfect. Could you give me more details on cooking until crispy, other have mentioned cooking real slow and then taking of the top for use in cooking and the lard at the bottom for frying. How would one make it crispy. I guess I get to the butchers and ask for 50/50. Though I live in France and my French is terrible so I guess we shall have some fun here. (ill probably end up with pig foot). o yes and ill try that soon too.
