If you're truly interested in this, find your local mycological society--a wilder bunch of folks you're not likely to find, a very fun crowd, not least because culinary mushrooms are not their only interest. Ahem. But the culinary ones are definitely their focus as a group, and during my first marriage we hung out a lot with the Oregon Mycological Society and learned a great deal. I still love oyster mushrooms fried in (what seemed at the time to be) an insane amount of butter with lots of black pepper. Needs nothing else. My daughters fight me over them! If you are not QUITE that adventurous, there are a few outfits with " plugs " and spores you can innoculate an area of your lawn or an old log with, so you can be pretty sure of what is growing there. Or if you aren't even that adventurous, you can get these nice hay blocks you just water. I did one of those for oysters ... gotta do it again now, with a post like that! They were really, really yummy and the harvest goes on for a fairly long time.
