BFL Friendly Lasagna

Hey Ladies!

I tried this " made up " lasagna recipe this weekend and it was a hit

with my family!

Check it out:

2 sweet potatoes

1 small onion

1 clove garlic

salt

pepper

1 tsp (or more to taste) dried/ground rosemary

Fat free mozarella cheese (I used about 1/2 package)

Fat free or reduced fat cottage cheese (to add more flavor can use

the onion and chive flavor)(I used about 2 cups)

99% fat free ground turkey (1 lb package)

1-2 cans tomato sauce (or use homemade sauce)

1 Zucchini sliced thin

about 3-4 oz baby spinach

Preheat oven to 350 degrees.

Thinly slice sweet potatoes (use instead of noodles :))

(I used about 2 whole sweet potatoes in a small/medium caserole dish)

Sautee onions and garlic with 99% fat free ground turkey

Mix in homemade (or jar:)) tomato sauce. Salt and pepper to Taste (I

also added in some ground rosemary)

Let simmer about 10 minutes

Put a small amount of sauce in bottom of dish

Layer thinly sliced sweet potaoes

Thin layer of cottage cheese

Layer of spinach

Layer of thinly sliced zucchini

Spoon on layer of turkey/tomato sauce

Sprinkle on about 1/2 cup of the fat free mozzarella

Repeat one more time (depends on how deep your dish is)

Bake at 350 for about 30-40 minutes.

My sweet potatoes were a little " crunchy " still at 30 minute mark -

so depends on your oven.

This is a huge hit with my family and totally quenches my desire for

pasta lasagna.

We enjoyed this so much - I just had to share!
