Salad - There is a salad place in KC called The Mixx. They have something

called a Garden of Eden salad that is chopped apples, candied pecans, blue

cheese and field greens with a champagne honey vinaigrette. It rocks! And

I'm sure there are no calories in it. :-P

At home I'll make something similar but with feta cheese, cranberries,

walnuts and field greens.

Fruit - I'm a berry junkie - blueberries, blackberries, raspberries. I eat

so many of them this time of year, I may turn into a berry. When they're not

in season, I'll pay a stupid fortune for New Zealand blueberries.

Veg - I probably eat more spinach than anything else. I put it in salads and

smoothies, on sandwiches, in omelets. Carrots are a close second. It has

come to my attention that my wacky rabbit food consumption might explain why

I don't need reading glasses when everyone else my age seems to be going

blind.

a salad i make with brown rice, lime juice, black beans, cilantro, chopped

tomatoes, cumin, a teeny bit of corn (i don't like to up the carbs a ton) and

maybe some cooked broccoli if i feel like it, atop mount lettuce. it's a

modification of a salad i once found in an ancient Cooking Light Magazine. the

closest i can find online is this, though i don't put in olive oil and i use

brown rice:

it's sort of a modification of a veggie burrito bowl without the guac (which i

lovelovelove.)
