Michele, I love reading your updates., Just a question re the moussaka - I used to make it (and yes, it is a bitch to make timewise) but I was wondering if you have any light-cal version of it. The moussaka I used to make was -layer of eggplant slices grilled with garlic -layer of browned beef -layer of sliced tomatoes -layer of mashed potatoes Repeat until you run out of ingredients, leaving the mashers on top. Roast in the oven. Sometimes I added cheese on top. I guess I could do half potatoes/ half cauliflower and of course no butter. Alena Moussaka is Greece's version of lasagna kind of. Takes about an hour and 20 minutes to prepare then another 45 to bake. If anyone wants the recipe let me know.
