I have found that Anisaldehyde works well in gourmand fragrances. To me it has a

sweet almondy scent, with a hint of floral but dominating almond. I also found

that it is more suitable as a heart note and is very tenacious. Only a small

amount is needed; it can easily dominate, but blends really well with woods and

cocao, coffee, Ylang Ylang and nutty accords. I also like it with Citrus but you

need a really light hand when you blend it in lighter blends.
