Sacc boul, sacc cerevisiae (bakers/brewers yeast) and Candida Albicans are different species of yeast so it's like comparing foxes and badgers, both mammals but different species. Entirely in a different direction, if you are not GFCF Galina, have you tried making sourdough bread? It's really fermented grain like sauerkraut is fermented cabbage. Might be worth a try.
