Guest guest Posted December 15, 2006 Report Share Posted December 15, 2006 Well, it's not unusual and has probably been done to death by the experienced BfL'ers - but this week I've had: Fresh spinach salad w/grilled chicken, grape tomatoes, onions, peppers (red and green), and lite ceasar dressing; Fresh spinach salad w/grilled* salmon*, grape tomatoes, onions, peppers (red and green), and lite ceasar dressing (hahaha - see a pattern developing here??); 's ceasar side salad and plain baked potato w/pat of real butter (not that whipped crap); oh yeah, and Fresh spinach salad w/grilled chicken, grape tomatoes, onions, peppers (red and green), and lite ceasar dressing! Guest guest Posted December 15, 2006 Report Share Posted December 15, 2006 I stewed chicken with carrots, green pepper, onions, cumin, garlic powder, chile powder, tomatoes; cooked until it shredded easily, layered with enchilada sauce, corn tortillas, several layers. I put regular cheese mixed with lowfat on top, but scraped most of it off of my piece. I also got overzealous in trying to de-fat the cheese on top, and ended up gettting some of it stuck to a paper towel, in effect scalping half of the casserole. Not too attractive, but it tasted good. The children liked it. It was a sort of open-faced enchilada stack. Served with homeade pinto beans, which I love. I sometimes substitute cooked vegetables instead of the salad. So yummy.
