Well, it's not unusual and has probably been done to death by the

experienced BfL'ers - but this week I've had:

Fresh spinach salad w/grilled chicken, grape tomatoes, onions, peppers

(red and green), and lite ceasar dressing;

Fresh spinach salad w/grilled* salmon*, grape tomatoes, onions, peppers

(red and green), and lite ceasar dressing (hahaha - see a pattern

developing here??);

's ceasar side salad and plain baked potato w/pat of real butter

(not that whipped crap);

oh yeah, and Fresh spinach salad w/grilled chicken, grape tomatoes,

onions, peppers (red and green), and lite ceasar dressing!

LOL! Sorry, I'm no help yet with meals. I'm keeping it as simple as

possible.

I stewed chicken with carrots, green pepper, onions, cumin, garlic powder, chile

powder, tomatoes; cooked until it shredded easily, layered with enchilada sauce,

corn tortillas, several layers. I put regular cheese mixed with lowfat on top,

but scraped most of it off of my piece. I also got overzealous in trying to

de-fat the cheese on top, and ended up gettting some of it stuck to a paper

towel, in effect scalping half of the casserole. Not too attractive, but it

tasted good. The children liked it. It was a sort of open-faced enchilada stack.

Served with homeade pinto beans, which I love. I can share that recipe if

anyone's interested. It's Texas pintos.

I'm tired of my current list of food. I have EFL, I belong to the board for BFL

recipes. I know what /skwigg eats.

Tell me what you're having for dinner. I need some new ideas. It doesn't have to

be unique, just something I'm not already having.

Sounds great, thanks! I just use the canned pintos from TJ's... I'm

too lazy to make my own.

Grilled salmon, with lettuce, carrot, potato and a dash of salsa is

my most favourite dinner meal. I sometimes substitute cooked

vegetables instead of the salad. So yummy. :)
