This is firstly to eliminate gut bugs by starving them out. As they detach from the gut wall, the gut is raw and sensitive. Using easy to digest foods helps heal the gut wall, and slowly introducing one food at a time further helps to see what is tolerated. If anyone is thinking of doing SCD I would strongly recommend Pecanbread.com as a good source of info. It has strategies to cope with picky eaters, it has a list of intro foods and follow on foods and it has indepth info on the science behind SCD and why it is best to go slow and with caution when introducing new foods. It the gut is damaged, healing it will require time and patience and to rush into advanced foods will only feed bad bacteria and undo any good. Remember these bugs cause the gut wall to produce excess mucus which compromises digestion, and until they are killed off, the cylce will not be broken i.e. gut bugs giving off neurotoxins, which affect behaviour and cause gut damage, and which cause the gut to over- produce mucus, compromising digstion and further feeding the bugs. I guess it all greatly depends on the shape of the gut when you first start and how different things are tolerated by each individual child. I couldnt get Joe to eat the soup so gave him the ingredients (i.e. boiled chicken and carrots) instead. It was manageable for one day. I remember Joe was really starving for the first couple of weeks of SCD he was eating a whole organic chicken a day (he was 5 yrs old), plus other food too, It cost me a fortune! Not sure if this was withdrawal from corn or his bodys reaction to getting a diet it could actually process properly. Anyway I saw it as a good thing, but was glad when things calmed down. I vaguely remember making some chicken pancakes, I think the recipe was from pecanbread.com that he ate for a while until I thought it was ok to introduce nut butters. He likes crispy food best too. Crispy nitrate free bacon was ok after the first day, also I think beef patties are beefburgers, or thats what I used anyway. Once he could have nut butter things were much easier. Mel, the cashew nut bread I mentioned before is not so bad, I toast slices and give it to Joe for breakfast, I could give you the recipe to try? Darla one piece of equipment you will definitely need if you dont already have one is a good food processor. Our kids are such picky eaters I think that in a lot of cases it would be impossible to do the intro. Like you said, it depends on the state of their gut function, and what they are willing to eat. Even half or one day of intro diet has benefits, or they can always go straight to stage 1, then go back to the intro at a later date, as and when they will eat a more varied diet. Tailoring the diet to the childs self-imposed restrictions has to be taken into account, if they won't eat it then it becomes a battle ground, child winning a lot of the time!!! I am delighted for you that you are seeing such great results, and so quickly into the diet. I think this diet can really help out kids. None of them are for the intro diet, but as Natasa pointed out, this can be skipped, or even tried out at a later date, when his self imposed food restrictions start lifting. You can for example, bribe him. One bite of SCD food for one of his regular treats. Then 2 bites of SCD food for a treat, or try to feed him when he is distracted, e.g. if he has a favourite t.v. programme, or computor game. I bribe my dd with money!! For every clean plate of SCD food, she gets 50p for her money box, to save towards a play station game. Can you explain to him that this diet might help his tummy, and it is not a diet forever. Ask him to try it for a month, to see whether his tummy feels better. Hopefully after the month, he will be eating a larger range of foods, and might even enjoy some of them!! In a convection oven, preheat to 325 and bake until they start to turn slightly brown on the top (the bottom browns faster), about 10 - 12 minutes. I haven't tried it yet with a non- convection oven, it probably needs 350 degrees. If they brown too easily lower the temperature. Once they cool a little on the baking sheet, take them off to cool on a rack or in a big bowl. The get more crispy as they cool. In a frying pan melt ghee 2. Add spinach, garlic, water and salt. Cover and cook till wilted and the water is evaporated 3. Take from the heat and mix in almond flour 4. Spread on a cookie sheet lined with parchment paper. It should be very thin, about 1/8 " 5. Bake for 25 min. 6. Remove from the oven and carefully cut into small squares without lifting it from the sheet. 7. Lower the oven to 170F and bake (dry) for about 60-80 min. They are very crispy and hold well together.
