Hiya, I attempted to make the following muffin recipe from Pecanbread, but realised I had no paper cases, so I used a 1 lb loaf tin and chucked it in that. I cooked it at a lower temperature than the recipe stated and cooked it for longer. Nic loved it, it sliced nicely, and looked like bread. The next day it even went in the toaster, and he had it with "jam" made from strawberries cooked with honey and a tiny bit of gelatin (I did try freezing a couple of slices of the bread as an experiment, but when defrosted it was soggy - not a problem really cos I think Nic would've scoffed the lot in one sitting) Nut butters are a stage 2 food, but to be honest we got to stage 2 really quickly (been doing scd for about 6 weeks now) I find scd

easier than g/c/s/y/rice etc free diet cos all nic was eating was rice or potato based stuff. He eats really well on this diet with meat, fish, veg and fruit, the rest of the family call him the little cave man ... (and they call me Ma Larkin, I like to think it's a) because i look like a slightly older catherine zeta jones, and B) because i've become a whizz with the home cooked goodies) 1 cup cashew butter2 small bananas 2 eggs1/2 tsp baking soda1 tsp apple cider vinegarBlend cashew butter and banana in food processor until complete blended.Add eggs and blend again.Add 1/2 tsp baking soda, blend again.Add 1 tsp vinegar, blend again.Divide batter into 12 cupcake paper lined muffin tins.Bake at 400 for 10 minutes. Happy baking Jane
