Guest guest Posted July 18, 2009 Report Share Posted July 18, 2009 This may be OT but not really, nothing is much finer to our West Coast Pallet's than the Little Wild Blackberries. I attempted to make Pancake syrup today, which I've forgotten how I used to do it. My goal is not Jam, it's Syrup, i.e. Jam that didn't set up, my intent rather than accident. I doubled the recipe and used the amount of pectin for a " single " batch. It's defenitely setting up anyway..........It really is sunshine in a jar. Like raspberry jam, only home canned is quite the level of divine as I'm not restricted to the commercial requirements of cleaning and rinsing. You may easily encounter a fir needle in mine, or grass seed. Okay, I pick out the big chunks like leaves, or spiders.......I got 9 pints today, and I'll be heading back out to pick more berries. Good picking right now, got a couple gallons in 2.5 hours last night. I consider it VERY lucky when I spend the time picking and not " searching " . so if someone can enlighten me on " syrup by design " , please share. Googling was utterly unsuccesful for me.
