Working Butter

How do you easily get the water out of the butter after it has made? I make

about 50 pounds at a time and no matter how much I hand work the butter there is

still water left. This greatly reduces the shelf life. We typically work the

butter on a table at about 70 degrees. I have tried chilling the butter somewhat

and this does not help. Is there a machine that can do this? Any ideas would be

appreciated.

I rinse my butter with water and continually press it out til it is all gone.
