And eventually it will go back down on its own. So I did not worry and sure enough, that scoby never dried up or anything else bad happen to it. What do you do in situations like these? I use 2 1-gallon pickle jars to brew. The tops are narrow and the SCOBY is forming a tight seal where the jar narrows and then it is popping up like a jelly fish. I used a wooden spoon handle to push it back down. Thanks. You just have a very healthy and vigorous specimen (mountaineering genes? ;-) The mighty bubble activity in the scoby and underneath it acts as a 'floating-up mechanism'. > What do you do in situations like these?
