Fluid milk is very costly, if you have 80-100K I think you should be able to set up a fluid milk plant. I think you will also find the return on investment is not as good as hard aged cheese.

One of the beautiful things of aged cheeses are that you never really have a product that goes out of date. it can sit on the self for 10 or more years and it only gains in value..........not that it would ever sit there that long there is too high a demand. When you pasteurize milk or do fresh cheese the clock starts ticking once it is pasteurized and you have so many days to move the product if you don't move it you have to take a loss on it.

Just some thoughts.

Are you looking to put together a small plant for bottling milk or making cheese?

We are in NY where there are alls sorts of laws and are building our second micro dairy plant. The first one we built was in Alaska where the laws are now worse then NY!

We are making raw milk aged cheeses.

There are lots of options.

How many cows do you milk? Seems the learning curve for aged cheese would also cause waste. How was your learning curve? Barn designs including recieving and processing? Your becoming a consultant.

we just spent that much remodeling our barn into a grade a double six parabone pit parlor with mostly used equipment. My guess is that in any state you are in you will have to go grade a or at least b before you can do anything else. this is for fluid milk pickup.

I think it usually takes a couple of years to learn how to make good raw aged cheese. We did a lot of small batches while we where building our first plant, and for several years previous to that . We made a lot of chicken food. but we had a lot of milk we could not do anything with. so it was not a real loss.

There is still some loss with aged raw cheese, There is shrinkage, and once in awhile there will me a batch that is not up to standards, but it is not as bad as I have heard from fresh milk and cheese sales, I will have to say I have no experience with fresh milk or fresh cheese sales directly. I have talked to many producers of the fresh products and you have to take back any product that does not sell by 2 wks I think is the time.

There are many systems and each is unique. you have to figure out what you want to do and what the market is lacking and what you can do.

It is a long process. there is no quick easy money farming! But it can be done if you are truly committed and willing to see it through.
