Guest guest Posted March 17, 2011 Report Share Posted March 17, 2011 Hi I would qualify myself as an experienced brewer: I have been brewing almost non-stop for 4 years and have made quite a few Kombucha convert. I am faced with a strange issue: SLOW but very slow fermentation. It takes my brews up to 15 days to get sour, in Miami, FL ... Warm Weather most of the year ... it doesn't matter .. My brews takes at least 2 weeks and often more. I have changed SCOBY sources, to no avail... they always fall back to the slow fermentation .. Also my brews do not carbonate that much unles I add some ginger or hibiscus or other fruits, else .. tepid carbonation. I have double femernted some of my brews for weeks .. I repeat: WEEKS and have seldom obtained the volcano people keep raving about .. Out of the jar, my brews are not flat.. slight carbonation and it remains so... No problem in SCOBY production ... SImply too long a time to brew in a rather warm to hot weather. I use Distilled or Reverse Osmosis water 6 to 7 teabags per gallon 1 to 1 and 1/2 cup of white sugar 6 teabags og Organic Tea (Whole Food Store Brand) Same , Exact procedure with same exact teas at some of my friends , brewed with MY SCOBYS and starter produce sour teas in less than 10 days ... After their 15 days of brewing they taste good and after double fermentation mildly carbonated to repeat myself but nowhere what one gets with something like GT Kombucha... When brewed at home ... If you can believe it, I have it worse.Already this " new " brew, has started the 5th of February. I thought of getting a new scoby but I fear the same thing would happen again.I have tried so many different recipes it's not even funny.Maybe someone is trying to tell me it's just not in the cards for me and KT.My brews take like 2 months, if not more, to ferment.I am about ready to throw in the towel. May I suggest trying a brew of 8 cups of water 1/2 cup sugar ( rounded ) 3 tea bags I know you are doing the continuous brew, but perhaps a smaller brew in a jar will give you the desired result.
