What do you mean by " from scratch " ? If you mean from some raw say ... GTs?

I've never tried this, but the person who gave me my scoby said that she bought

a bottle of commercial KT and left some in the bottle (the sediment part) and

left it out on the counter for a couple weeks and a scoby formed. I've seen

them start forming when I've taken a couple days to drink a whole bottle of

commercial so it probably works. I'd put a cloth or something over the bottle

to keep it hygienic.

I have successfully started many scobys from bottles of raw commercial

kombucha. The best brand for this is High Country. I have done multiple with

GT's, most successful but not as quickly or as viable.

The recipe is:

1 16 oz. bottle raw kombucha

8 oz. sweet tea (1 teabag, 2T sugar)

Combine and cover with cloth, paper towel or coffee filter and let sit! High

County will form beautiful scobys within 2-3 weeks.

I have not seen High Country here.

The co-ops seem to carry GTs and then one or two made by local folks. I

have not tended to like those as much AND they tend to cost a lot more.

Whole Foods has GTs and they recently started carrying a coconut water kefir

beverage. Sadly that is sweetened with Stevia and I didn't like it. If it

had been unsweetened I might have liked it. I have been curious about

trying water kefir and hoped it might give me an idea of if I would like it.
