I only have a couple of people that are buying from use at this time, so I have alot of extra milk. I'm planing on making some yogert this week, so that will take care of some of it, but not all. we have talked about ice cream, one of the few ways my husband will think of eating it. how well does it freeze? could I freeze a few gallons at a time to drink in the off season, does it change the milk? any ideas would be great. le Quote Link to comment Share on other sites More sharing options...
Guest guest Posted March 20, 2009 Report Share Posted March 20, 2009 Goat milk makes fine ice cream...my favorite is peppermint.<G> There's also wonderful cheeses you can make with goat milk, like feta, chevre. I freeze my extra for the off season. I usually make kefir out of it. Guest guest Posted March 20, 2009 Report Share Posted March 20, 2009 Make ricotta - yesterday I had an abundance of milk and took 2 gallons heated it to 195 degrees, then added 1/2 cup of apple cider vinegar. The curds separated quickly which I scooped up and put through a cheese cloth to drain. I only let it drain a minute as I didn't want it too dry. I then put it in a bowl, added some sea salt and garlic powder and 1/2 tsp baking soda. The result was wonderful ricotta which I will use to stuff shells (complete with fresh spinach). It will also freeze well for later...they whey was retained to cook bread with or pasta.
