Is there a link to where I can read about the whole process, step-by-step? I want to repeat this brew. Hi , that's an excellent desription of what the newly forming scoby on top looks like! Congratulations on a culture that's performing healthily as it should! Next question: What does your brew taste like? That's probably more important than the scoby question. After 8-10days (less days if it is really warm), I taste my brew with a straw, and when it tastes like slightly acidic apple juice, sometimes bubbly, I bottle it.
