I have read that you can store scobies indefinitely in the fridge. Is this true? Do they need any maintenance if they are going to be refrigerated for several months? Do I put a lid on the jar? Make sure the scoby is covered in enough kombucha tea (already brewed, not sweet tea) to keep it floating (or submerged, whichever it likes to do), and that if the jar has a metal lid that there is something under it - a layer of saran wrap or waxed paper (if you can close the jar that way) or something. Kombucha cannot touch metal, it will leech out all kinds of unhealthy things, and even just a lid on a jar kept upright will eventually come in contact as the liquid evaporates, condenses on the top, and drips back in. But yeah, the colonies go into stasis in the cold, it will keep pretty much forever. Do I put a lid on the jar? > > Carla > Carla, I keep my scoby(s) when not in use in a glass jar with lid on in the refrigerator, with a sugar tea covering them. At least once a month I drain off a little of the residual liquid and replace it with sugar tea. I have had no problems what so ever.
