both kidneys and liver have a smooth texture. neither are tough. I just didn't

like the flavor of the kidneys. too strong. liver has a unique flavor too. try a

recipe like the liver and onions in Nourishing Traditions or the chicken liver

pate. I ate liver as a child and liked it even then.

It doesn't sound as bad as I'd imagined it would.. I definitely need to get that

book ! I was hoping to borrow it from the library.. since it's almost $30 at

and Noble.. but they only have one copy.. and it can't be checked out..
