My senses have probably all been shot from being born & raised on what the supermarket had to offer.. I didn't really know/understand about organic food until I was in my early twenties ! My mom's main concern was raising 6 kids by herself (with health problems) after my father passed away. It's not that she just wanted to save money. She really didn't think the government was as bad as it is. She trusted the food in the supermarkets. I tried to become a vegetarian in my teens mainly out of concern for animal welfare... and I hate to admit... I wanted to be a part of something I thought was cool.. I felt like a hero for saving lives.. especially after taking the PETA pledge. Then I felt so weak since I didn't like vegetable.. except for rice and beans (LOL).. So that didn't work out too well.. It's hard.. as I'm getting closer to my 30s .. it seems like I'm discovering true nutrition so late.. I wonder what difference it would've made in my life had I had the opportunity to have been raised the WAPF way. It's crazy.. because my best friend has been following the WAPF since 2008 and tried to talk to people about it.. and sometimes they didn't even try to brush it off politely. She stopped talking to her co-workers because they thought she was going through a " faze " and that she's completely wrong.. into conspiracies.. and a bit out there.. they won't even consider doing their own research. I must admit.. I was very skeptical.. not about my best friend.. but I didn't trust WAPF.. it went against everything I knew.. and I've been slowly but surely coming around.. after all.. I want everyone.. They have 2 types, one is " thick and mild " and it makes a wonderful, not sour, spoon thick yogurt. Even on a 24 hour ferment, which is how I make mine, it doesn't get very sour. I'm not that crazy about using gelatin if I don't have to.. You really caught my attention when you said that after a hour fermentation period with the yogurt starter.. the yogurt wasn't that sour ! I recently purchased raw milk kefir grains from e-bay... which sounds kind of odd... knowing you can find almost anything on e-bay lol not that I'm complaining !! lol Talk about one stop shopping !! I should be getting it soon in the mail.. I think it was $7.50 total .. enough for 2-3 cups they say.. I did like the raw milk.. when it was fresh.. up until it was two weeks old.. on the 3 1/2 week mark.. it didn't taste right to me.. It had an aftertaste and was thick .. reminded me of when I'm sick with a bad cold and congested... it wouldn't go down when I tried to drink chocolate milk I had made. I gave the yogurt another try with my sour milk.. raising the temp. to about 120 degrees (gently, slowly).. then I turned off the stove.. and let it sit for about 10 minutes.. and put it in the oven at 100 degrees for about 10 hours and it did come out alot thicker.. ! I put it in the fridge.. then decided i'll try making cream cheese.. since I don't have a type of yogurt strainer.. I made due with unbleached cheesecloth.. I opened a lock n lock container.. put the cheesecloth sheet over it.. held the edges so it doesn't fall in.. added the yogurt in the center of the cloth.. and carefully attached the lock n lock lid.. so the cloth (with yogurt) is suspended in mid air.. while the whey is draining down to the bottom of the container. I like learning new ways of doing things... Ex: Learning how to make bread made me appreciate the work put into creating things people buy without thinking. That's young compared to most people! :-) I was raised with a lot of those natural health principles since there were a lot of farmers in my family, but didn't think they were that important and didn't appreciate them as an adult and we moved further and further away from farming. It took a long time and some health crises in my own family for me to slowly get back to that way of thinking and even move beyond what my own family taught me by way of WAPF. Now I find myself reminding my own parents about healthy food of their parents and grandparents that they have moved away from. (like pasteurization) I talked to my father about raw milk the other day (he is 70) and he told me that his parents (not farmers) bought their own pasteurizer in the 50's to pasteurize the raw milk his family got from the family farm because they wanted to be healthy. Brainwashing of the times. Anyway, after reading your posts, I was just going to point out that as you move more and more into this way of eating and you also go through your 30's you may find as many have, that your tastes do change. You will probably not enjoy things to be quite as sweet and will develop a palate that likes foods that right now might not appeal as much to you. Also, the more you present foods to your young child, the more they will develop a taste for them. I think I've heard before that a person has to taste something 26 times (or some number like that) before they will like something that they don't initially like. I make my son eat at least a couple bites of things he absolutely detests every time it is served and slowly he comes around to pretty much everything. He is 11 now and is finally showing a preference for the healthy things and sometimes when he indulges in something not healthy, later on he tells me " Mom, I need some healthy food now. " LOL I think he can physically feel the difference between those kinds of foods now. As for me, in my 40's now, when I eat the foods I might not have liked in my 20's (sour foods, whole grain foods, plain yogurt, raw milk & cream, kefir, etc.) It tastes like heaven to me now, especially once I moved out of eating things like chocolate milk and HFCS. I agree with you 100 % I didn't like pure maple syrup, broccoli, onions, brown rice, and yogurt up until recently ! ! I used to drink coffee with maybe 4-5 tsp. of white sugar !! Now.. if I do drink coffee (which isn't that often).. I make organic caffeine free coffee with 1/2 tsp. of raw sugar ! I switched my salt to ancient sea salt. Whenever I make iced tea.. I add maybe 1/4 cup of water, and alot of ice to water it down.. so it's not too sweet.. I tend to do the same with organic apple juice. I don't know how far I'll go with WAPF.. but I'd like to be realistic and reasonable about the whole thing. Against Ex: I don't think they can convince me to drink animal blood or eat liver, veal kidneys, and beef tongue. For : Sprouting my organic brown rice, eating mainly wheat pasta, recently giving up my cereal and replacing it with organic rolled oats from Whole Foods bulk bin, or Cream of Wheat, using dry beans instead of can, using raw milk instead of my skim milk (very difficult because I feared I would gain alot of weight since it's whole fat).. I've stopped drinking as much juice... more water.. switched my Tom of Maine toothpaste to fluoride free toothpaste, ... I soak my beans.. but I don't sprout them.. I tried.. and when I cook them.. all of the shells fall off and float to the top.. as oppose to my soaking them and then cooking them.. they stay intact. the list goes on and on.. The way I'm able to drink raw milk (still a newbie) is mixing 2 tsp. of chocolate syrup in a mug and putting maybe 3 ice cubes.. and letting it sit.. melt a little.. for about a minute. I'm not ever going to be drinking blood, and probably not eating some of those organs and things you mentioned either. It sounds like it is the same thing for you too. Don't fret about it, your milk drink sounds delicious! I definitely know Ahlaska syrup - we have it for my son. I used to make it for him quite often, but he now has it maybe once a month. I love maple syrup - it is the best! But I keep some " regular " pancake syrup around because I can't stand it when I serve my expensive maple syrup to my nieces and nephews and they think it is yucky! LOL... I'm not sure what to say about the fluoridation problem. It would eat me up inside if I served my prized healthy items (which aren't cheap $ to begin with lol) and the people I had served it to didn't like it !! What a waste ! But at least they had a chance to try it ! I LOVED pancake syrup.. it took me a little while to get used to maple syrup.. I tried Whole Foods 365 store brand.. and didn't like it.. I tried again.. This time.. Highland Sugarworks Certified Organic Grade A Medium Amber Pure Maple Syrup from Vermont. I like it.. after maybe 3 tries ! I can't believe it has calcium and iron !!! I was worried.. it was watery.. and maple syrup tends to come in smaller containers.. I thought it wouldn't be cost efficient.. but I'm surprised how long it has lasted ! My next goal is working my way up to raw honey. I use organic honey... I was confused because there are different types of " raw " honey.. the cream colored one.. it turns out is processed ! I don't understand how they can call it raw..
