Guest guest Posted July 4, 2010 Report Share Posted July 4, 2010 yogurt generally takes 6 - 12 hours. Never just a couple of hours. Most homemade raw yogurt is thin and soupy. Just drink it. There is nothing wrong with it. The good bacteria in yogurt culture create a good environment and so warm temp is not a problem. Those that are inexperienced with raw milk and culturing are scared of high temps and milk, but both yogurt and kefir are made with warm milk and they are wonderful products. Just not what the store sells. Rhonda Two Raw Milk Expiration Questions Hey ! I was wondering.. 1- How long you think raw milk can crash in the fridge until it'll no longer usable? I've had raw milk in the fridge for about 2 weeks.. one container is unopen.. (I bought 3 half gallons.. and didn't estimate.. so I had left over.. moreso than I needed.. because I didn't have a thermometer or yogurt cultures to make it.. I had to wait.. )2- I tried making raw milk yogurt.. and it remained soupy after a couple of hours.. it never set... even in the fridge.. I dumped it.. and started again.. and this time.. I left my yogurt in my on again off again 85 degree (bread proof oven option) oven from around 8:30am until about 9pm.. and I finally saw some chunks forming !! I put it in the fridge.. I buy 3 gallons every 2 weeks and sometimes we don't open our last gallon until the 3 week mark. So really there is no way to answer this. I tell customers all the time, it stays in MY fridge for 4 weeks. In theirs? I have no idea. You just have to test it out. Put it to the coldest temp. try not to have kids or yourself open the fridge 20 times a day. Put on the lowest shelf in the back and so on... But not mentioned, is the matter of "do you know the 24hr bacteria level" of your milk to start with ? Low count bacteria (Standard Plate Count) vs. a higher count will affect the shelf life/Safety. Also, is your milk jar labeled with the date it was "put up" so you have a date to start with. Our jars are dated, through monthly testing, I have an idea to our general (SPC), I see my customers weekly, and always chose a CONSERVATIVE response to the "shelf life question" - to factor in humane error (left it out on the counter) and the "fridge factor", Health and Safety is foremost....8 - 12 days if all things are at Standard or Above. And again the emphasis "There Is No Way to Answer This" use your own discretion and caution when advising others/customers. If the milk the milk has begun to clabber (sour), you can use it in pancake batters and coffecake recipes in place of buttermilk. I usually pour the clabbered milk into a saucepan, bring it to a boil to firm up the curds and then strain it out and press it to make a fresh cheese. Yes, I realize that it is no longer raw at this point, but it is still a delicious farmers cheese. We usually make a dish called " chenna borji " out of the curds. Fry up some black mustard seed and cumin in a little oil or ghee, add some chopped onion, chopped jalapeno, saute until golden, then add a chopped tomato, a bit of tumeric, salt and pepper, add the fresh curds. Stir and cook for another few minutes to blend the flavours. Add some chopped cilantro, basil or parsley. Serve on toast. If only a small amount of milk has clabbered and I don't have enough to make any particular recipe, I dilute it with water and spray it on the garden or water the houseplants with it. If you want a firmer yoghurt, try incubating it at a higher temperature. I find that the lower temperature incubation makes a Turkish style " driking " yoghurt, whereas the higher temperature incubation makes a firmer " eating " yoghurt. If you want a really thick yoghurt, incubate at the higher temperature and then strain it. Line a colander with a piece of butter muslin, pour the yoghurt into it, tie up the corners and let is hang for several hours or overnight to drain. The longer you drain it, the thicker the result. If the milk the milk has begun to clabber (sour), you can use it in pancake batters and coffecake recipes in place of buttermilk. I have to keep pushing the button until the correct temp. (I want the fridge to be) registers.. so .. let's say.. I set my freezer to below zero.. I have to keep checking to make sure it's not above zero... I did try making chocolate milk.. and when I first got the milk a few weeks ago.. it was refreshing.. now this unopen gallon... it left a bad taste .... I will definitely try to start over with fresh raw milk ! I wish I could duplicate Dannon plain yogurt without all of the extras.. !! Pretty thick yogurt... Seems like they may be using gelatin .. I want to keep yogurt simple and cost effective.. Guest guest Posted July 5, 2010 Report Share Posted July 5, 2010 I don’t make yoghurt but was just reading on redwood hills site that they add some tapioca to their yoghurt to thicken it. For fridge temp you can always buy a thermometer and keep it in the fridge to see what your temp settings are. Milk is alive and constantly changes. also the goat or cow, in lactation they change too. I notice more interesting (shall we say) tastes further along in lactation. My one goat will give less but creamier the further along in lactation. Also I notice slight changes in taste depending on the weather, the goat, where it sits in the fridge (next to other foods?) how many times its been opened. If my buck is in rut sometimes that changes my does milk. Also i’ve never “tasted many of those things, possibly you have a more discerning sense of smell and taste. Milk I drank tonight had a bit of an aftertaste I couldn’t figure out. Still went down great.
