After reviving my scobies with fresh tea, I recycled all the old ones (after

faithfully shopping my friends to get them to start brewing!) and started with

the fresh scobies. I now have two gallons ready for drinking, and with two

fabulous new scobies on top. The nicest thing has been having a little sweeter

tea to drink. Mine had brewed for so long! Poor neglected scobies didn't seem

fazed. They just keep growing and growing.

I tried to get a scoby from a store bought bottle to have an organic start (my

tea hadn't been organic to date), but that got moldy :(

That made me nervous about my others, so I cleaned the area very well. When I

dip into my current brews I've been adding some of the last of my really really

sour batch on top, hoping that will prevent that mold I keep reading about!!!

Anyway, I just wanted to share my success with my year long dormant scobies. I'm

amazed! Next I'm going to use organic tea, have been using organic sugar all

along.
