Guest guest Posted April 30, 2011 Report Share Posted April 30, 2011 I'm just finishing my first brew. I will bottle tomorrow if I can wait. Might happen today because I can hardly wait to start drinking it. Today is day 13 and I don't think this gallon will last until the next is brewed. Someone I spoke to locally for advice has been brewing for 25 years. He said that a lot of people don't know it but it is important to let the scoby rest after each brew. He puts one to rest in the fridge with some KT and has another one on the go. Any thoughts on this? I've read up a lot and haven't come across this. If I start another brew right away, it obviously won't get any rest. Also I don't know if I should split it yet or do my next brew with my starter (shared by a friend) and the new baby together. My baby is 1/8-1/4 " thick with some parts thinner and some thicker, in a tall gallon jar. Is it best to let the scoby get some age or to keep using babies?
