I received a fat, healthy scoby which I placed into a gallon sun tea jar, I now realize I made 2 newbie mistake. I made my tea wayy to strong, and now I'm a week or so into my second batch with same scoby and my KT has become vinegar so quickly! I also added 1 cup of sugar for every four cups tea. When I say I used strong tea, I mean it! I used a commercial bag of black tea that is intended for 1.5 L of tea, and I made 1 gallon! OOPS! My first batch of kombucha was so good even though I added a cup of sugar for every cup of tea.Now I got a jar full of vinegar, please help me save my culture. I will include info about the environment of my jar: sitting on stone counter in kitchen corner, area does not reach past 75F.
