I read that yerbe mate is a leaf from a bush and its steeped like tea, but do you ferment it too like KT? Tell me more….please? Or can someone point me to a good resource? Thanks much. Personally, I do not much care for tisanes (herbal teas), but brewed with proper tea (I used green Gunpowder) it makes a good healthy drink. Any tisane can be brewed with a minimum of 25 per cent of camellia sinensis, that's the 'cha - tea' bit in it. In respect of Mate - in order to avoid bitterness of the beverage - it is important not to use the water boiling, but well off the boil, similarly as it is with green tea. Then, after steeping the tea and mate together, I proceeded as with normal Kombucha-making. As to quantity of tea/mate .... oho and aha. One needs to experiment to find the taste that pleases. I used 2 tbspoons of mate for a 1/2 a gallon with a few teaspoonfls of gunpowder thrown in - it's still brewing and I haven't tried it yet. Guessing, I should have used half the amount of mate I used. I shall give you an update on my mad brew when it is tryable ... As it's such a long time I made it last, the knowledge of how exactly I had made it has seeped out of my brain.
