How can I calculate the calorie count in my home-brew kombucha? Could I measure residual sugar with a hydrometer gadget at the beginning of the process and again at bottling, and then subtract the calorie equivalent? I know that the longer you let it go the less sugar is left, but also the more sour it becomes. Of course if you are like me and add fruit or juice to the bottle then it changes again! I just figure it is alot less calories then just about any other fizzy beverage options out there and I just enjoy it! I would love to figure out the hydrometer so that I can figure out alcohol content, but I just keep getting non sensical results (the number goes up after fermenting instead of down...how can that be??)
