Guest guest Posted December 1, 2010 Report Share Posted December 1, 2010 I just made my first batch of kombucha, using green tea with brown sugar and a bottle of GT original raw kombucha. It rested undisturbed for 22 days (my kitchen is kind of cool) and now has a nice mother on top. Well, I touched it and now it's about halfway down. It smells powerful, pretty fermenty, vinegary but tastes like a tart kombucha. Is there anything that can go bad on it? I'd like to bottle this, let it sit for a day so maybe it will get a little fizzy, then refrigerate and drink. But I don't want to make myself sick if it could go bad... doesn't smell bad unless you don't like the smell of old beer -- that's what kombucha always smells like to me. What could I add for a flavor now? Next time, I won't let it sit so long (and I have this scoby plus two a friend gave me) so it will be sweeter. But might as well experiment with this batch. I like it a little sweeter, I think. I'm crazy for Dave's different flavors. Thank you! I'm going to post a picture of my new kombucha under Sally's KT in the files.
