Honey is a natural antimicrobial - will kill both bacteria and fungus.  Over

time it would eventually kill off the KT organisms.  Best to stick to sugar.

read it occasionally and still make lots of kt.

Quick question: Is it possible to use honey in place of sugar to make kt? I’ve

never done it, but one of our customers was asking me if they could.

I love the flavor of honey esp with green tea so if I want the flavor I add it

when I am bottling and it works great!

Hi Rodrick,

Yes, you can use honey instead of sugar. Probably best to use cooked honey for

the purpose rather than raw. The yeasts love honey and will multiply very

quickly. The taste is different, some people like it and some don't. Give it a

try on a small batch and see if your customer likes it.

Thanks, Bev. Do you think KT made with honey would favor the yeasts more

because it is hard on the bacteria? I know honey is used as an antimicrobial

and so it makes sense that maybe it wouldn’t work the best for KT.

Hey, whatever. I personally think the " only white refined sugar " is a total

myth. I agree it doesn't make much sense to use expensive raw sugar when

most of it is eaten up in the fermentation but raw sugar does just fine for

us. We make at least 4 gal. a week.

read the blogs man, use honeys when you bottle it (because it only affects

the flavor) for best results, but brew it with white refined sugar

favored by the yeasts. Try it, it is amazing how the love the honey...perhaps a

way to increase fizz.

Hi Rodrick and EveryOne,

There is a very ancient saying from the Vedas..... " farmer be careful what you

feed your cow " . ...whatever you feed your cow will end up in your milk, in the

same way whatever you feed your Kombucha will end up in your KT. Why not use the

best possible ingredients so that your KT will be as beneficial as possible for

your health.
