The yeasts love honey and will multiply very quickly. The taste is different, some people like it and some don't. Give it a try on a small batch and see if your customer likes it. Happy brewing. I agree it doesn't make much sense to use expensive raw sugar when most of it is eaten up in the fermentation but raw sugar does just fine for us. We make at least 4 gal. a week.
