Yummy cottage cheese concoction

Thought I¹d share this simple and yummy meal I threw together last that¹s

going to stay on my list of favorites. It was really filling and satisfying.

1 serving of cottage cheese

1/2 of a Roma tomato diced up

1 cup of steamed broccoli

Big handful of sliced mushrooms

Garlic clove, smashed and diced

Splash of olive oil ­ maybe a tablespoon

Sautéed mushrooms in some olive oil and a big diced clove of garlic at

medium heat for about 4 minutes.

Stir broccoli into mushrooms ­ a little salt and pepper to taste.

Stir vegetable mixture into cottage cheese and tomatoes and enjoy!

I¹m going to try it with spinach and mushrooms next....lots of

possibilities.
