Makes me wonder why the industry only produces cocoa absolute not EO,

just like vanilla. I guess I thought they just didn't give themselves up

to the distillation process.

How did your husband separate it?

i am calling 'the dregs' whatever is left in the pot after the batch

is 'exhausted'...i started with cacao nibs from the local health food

store and ground them to a powder and put them in the still pot with

water....afterwards there was a lot of oil floating on top!

if you are set up for distilling, it is easy. if not, i bet it's not

too difficult.

Anya, i have no clue! we were wondering what the difference is

between what we got yesterday and the 'cacao butter' i buy to put into

my smoothies! i have never seen any cacao AB so i don't know what

the diference is from that either. all i know is that it SMELLED

chocolate and hardened during the cool night. we have a separatory

flask that we used.

what is the consistancy of the absolute?

I've been wondering that about coffee too.  Sometimes the oil just coats the

outside of the bean.

Maybe the " cacao oil " collected by Dabney is largely made from fats

(cocoa butter) and not the " scent " part obtained by chemical

extraction (like in absolute). This is why it solidified during the

night.

And the same goes for coffee (coffee beans have also rather high oil

content).

Any thoughts?

>Bella,you are probably right to a large extent...a lot of the scent

is in the hydrosol (o my!)...but i think this stuff has enough scent

to work with...it would be nice to compare the different creatures.

Hello Dabney,This is a stupid question,anyway here it goes.I've been reading

about this instant cacao oil and I was amazed. So let me see. If I boil the

chocolate powder that I use for chocolate milk it will form oil once it's boiled

and then cooled. Or am I terribly wrong ?Maggie( Corfu, Greece)

Maggie, i started with real cacao nibs...i don't know if what you have

is 'only' chocolate or not. i had about 4 or 5 tablespoons in my pot.

but what i am now reading is that i'm not ending up with EO...but i

think it could be used similarly...i haven't had time to find out...i'm

doing a fair this weekend.

Hi Maggie,

If I can butt in here, I don't think your method would yield the same results

because the cocoa powder you buy in the store has had the cocoa butter removed.

The nibs that Dabney used haven't yet had the cocoa butter removed.
