Well, is Polenta good? I like it! That's why I eat it! I like grains and

porridges and those homey, earthy textures.

I use 1 cup of coarse corn meal (I buy it by the bag, by Goya), with 4 cups

of water

Or 1.5 cups of coarse corn meal and 5 cups of water

Or 1.25 cups of coarse corn meal and 4.5 cups of water

Bring water to boil

Add corn meal at a slow speed (ie, don't drop it all in at once)

Use a whisk or spoon to stir constantly

It will be boiling and will splatter you and hurt - turn down the heat and

momentarily take it off the heat until the heat regulates.

Continue stirring for a couple of minutes, until it's thick and porridge-like.

Eat some fresh, or spread it all in a baking pan so you can more easily see

the portions. Or allocate to individual portion containers and then cover

and refrigerate.

I've been using it this way: Once it's cold, I take a portion, and slice

it. I then pan-fry it in a pan sprayed with oil. And have it with eggs or

other protein. I'm thinking of dicing it up, and using it in salads

too. I like it with a tomato-based salsa or relish.

Make sure you do the math (based on the back of the package) and determine

how many portions you are making. It will sound like very little, but,

once it is cooked up you'll find the portion is very substantial.
