A good friend of mine just discovered that she is allergic to wheat and has no idea what to do/eat. I know you all are on the cutting edge of where to find anything so I thought that you might be able to point me in the direction of where to find some recipes for her. I appreciate all your help! Healthy carbs that don't have wheat? - cornmeal (made into polenta) - barley (whole or rolled) - oats - yams & white potatoes - brown rice that should get you started..... Guest guest Posted April 3, 2006 Report Share Posted April 3, 2006 I have a friend who is gluten intollerant, so when ever I cook for her I have to be very careful, but it's not impossible. Your friend is going to have to become a professional label reader. Wheat is found in many times that you wouldn't exect, and anywhere it says " modified food starch " I'd eliminate as well. Ever look at a bottle of Soy Sauce? Contains Wheat! But, the cheep soy sauce does not. This looks like a good resource: http://www.celiac.com/index.html Though it is aimed at those who can have no gluten, it would give her lots of ideas. And this: http://www.wheat-free.org/books.html If all your friend is avoiding is wheat then she should not have too much trouble working into her new lifestyle. There are tons of products on the market now with out wheat. My gluten-free friend orders products from a specific place, I'll ask her about it. In fact, I'd be glad to ask her if you friend could contact her. (my friend) has been dealing with this problem since she was a teen, and has way more info than I'll ever be able to remember.
