Guest guest Posted April 7, 2006 Report Share Posted April 7, 2006 From my local newspaper; I made it the other day - good and easy n GLAZED SALMON olive oil spray 3/4 pound fresh salmon fillet 1/4 cup good-quality balsamic vinegar 1 Tbsp Dijon mustard salt & freshly ground black pepper Heat a medium non-stick skillet over medium-high heat and spray with olive oil. Rinse salmon and pat dry with paper towel. Brown salmon for 3 minutes, turn and brown for another 3 minutes Transfer salmon to plate Add balsamic vinegar to skillet and boil over high heat until about half the amount remains, about 3 minutes Lower heat Add mustard and mix well to make a smooth glaze Sprinkle salmon with S & P to taste and return to skillet. Cook 1 minute Turn to coat both sides with the glaze and cook another minute or two, until cooked thru. Divide salmon into portions and place on individual plates Spoon any remaining glaze on top. NOTE: The recipe says this is two portions, at 281 calories per portion (34g protein, 7g carb and 11g fat) I think it would be 3 portions, at approximately 154 calories per portion (23g protein, 5g carb and 7g fat) I think it's nice over a bed of fresh spinach, with strawberries and some sliced red onion or vidalia - or any salad Quote Link to comment Share on other sites More sharing options...
