Guest guest Posted April 12, 2006 Report Share Posted April 12, 2006 Hi I am new here and will do an intro email in a bit...just wanted to say that the last time I did BFL I adapted the oatmeal pancakes into baked oatmeal that is portable ( and freeze well) and you could add seeds...I will look for that recipe later today and will share Hey I found one...this may be it...( I remember that I had some recipes that were better than others. I will have to make this one again to see.... Lynn Baked Oatmeal Dry Ingredients: 3 cups Oatmeal 2 t. baking powder 1/2 t. salt 1/2 t. cinnamon Sweetener = to 1c brown sugar. I used splenda Wet Ingredients: 1 t. vanilla 1 cup FF milk* 1/2 cup fat free cottage cheese* 2 eggs (or 1/2 cup egg beaters or 1 egg and 3 whites...or 6 egg whites....you get the picture) * you can tweak the amount of cottage cheese and milk if you want I have also used yogurt instead of milk Preheat to 350 F. Mix wet and dry ingredients in separate bowls then mix together. Spread in sprayed 9x9 pan and bake 20-30 minutes. Serve as is or top with some FF milk or even some cottage cheese. My kids might like them topped with natural peanut butter and/or jam. Thanks for sharing.
